Alan first encountered Irish Black Butter in 2024 while organising delegate menus for The Universal Cookery Food Festival (dubbed the Glastonbury for Chefs). This rich Bramley apple conserve, infused with cider and spices, is incredibly versatile and tastes amazing.
After its creator, Alastair Bell, shared some with Alan for the event menus, Alan used it with fresh apple, more cider, and spices to create this beautiful tasting pudding.
Try it in mini black pudding pies, on thick buttered toast, as a savoury partner to meringue in a dessert, or as an accompaniment to a cheese course with mature cheddar and lightly pickled red onion.
Like the Black Butter itself, this pudding is truly versatile. Try it with Brioche eggy bread.
