A rich, aromatic, and spiced experience awaits. Our North African black pudding begins with a Leblebi, a traditional North African chickpea stew, featuring onions, garlic, chilli, turmeric, and a hint of saffron. We then infuse it with the sweetness of Moroccan apricots and dates, allowing them to meld with the savoury flavours. Rolled Scottish oats are added for texture, followed by our signature black pudding base and Lawns Farm's semi-cured pork fat. The result is a visually stunning pudding, showcasing the vibrant fruits, chickpeas, and the beautiful marbling of white fat.
This unique creation was the first flavour-based pudding Alan experimented with during his time running hotel kitchens, sparking his passion for innovative combinations.
